Producer: Las Flores. Washed Caturra grown at 1,850 meters in Huila. Light roast to preserve high-altitude acidity — crisp apple up front, caramel sweetness in the middle, citrus finish.
We’ve bought from Las Flores for four seasons. Fully washed, patio-dried, cupped at origin and again in Minneapolis.
Altitude shapes density and flavor. 1,850 m in Huila means cool nights, slow cherry maturation, and the bright apple-citrus character we taste at this roast.
After picking, cherries are depulped, fermented, washed, and dried on patios. We cup the lot at origin with the producer, then again on arrival. Only lots that keep the apple-citrus clarity at our light profile become a release.

We develop a target curve for each lot — charge, turn, first crack — then adjust for density and moisture. Light means we stop before origin character is muted. You taste Huila, not the roaster.
